Happy National Apricot Day!

According to Foodimentary, on January 9th we celebrate the apricot.  As food holidays go, this one is probably not on the top of my list. I’m not a big fan – but many of you probably are so here’s some fun info about apricots you probably never knew:

  • Apricot means ‘precious’ latin.
  • Apricots were first discovered 4,000 years ago in China, brought to the US in the 1800s.
  • 95% of apricots in the US are grown in California.

How to choose an apricot.

An apricot should be plump and give slightly under the pressure of your thumb.  Then you know its prime for picking (or eating).

The average apricot at about 35 grams contains about 3.9 grams of carbs (for all my keto friends).
